Curd cookies

These cookies are fun to make. Actually, this is our mother-and-daughter-cooking-together activity. 🙂
For these cookies you will need:

500 grams of curds (cottage cheese),

500 g of margarine

3-4 cups of wheat flour (it depends on the cottage cheese. If it is watery you may need more flour. but 4 cups are enough)

Melt margarine, add curds, then flour and knead dough. It should be elastic and come off hands easily. Put your dough into the fridge for 2 hours.

Then roll out the dough with a rolling pin and cut out rounds with a glass (Bozhena did a pretty good job with a little mommy’s help as you can see in the pictures above :))
Dip one side of the round in sugar and fold it in two, then dip one side of the halves in sugar again and fold them in two again. You’ll get little folded quarters. Dip the side of the quarters in sugar and put them on the baking sheet. (you’ll need approximately 1 cup of sugar)

Bake in the oven at the 180 – 200 degrees C. until lovely light brown color.
